“Jambalaya” was a big hit for country music singer Hank Williams. Williams began writing the song while on the bus of the “Hadacol Goodwill Caravan” touring show, while people were talking about, yes, food. It remains his most covered song. Jambalaya (the food) is a Creole dish of French, West African, and Spanish influence, consisting of meat and vegetables mixed with rice.
